JAPAN TRAVEL
French cooking, Italian influences and Japanese ingredients
Newly launched at Akasaka Intercity Air, Bistro Buzz combines the finesse and pizazz of French cooking techniques with the quality of Japanese, seasonal ingredients – served up in a classic French bistro interior in the heart of central Tokyo.
Iwate-born Chef Kei Imura's menu offers an exciting line-up of à la minute-prepared French dishes tailored to Japan's rich ingredients, across an inspiring menu of a la carte options, as well as a hard-to-beat Préfixe course.
Standout mains include the Beef Wellington-homage, Baked Pie-wrapped Lobster and Scallop, as well as the Roasted Back Bone of Lamb, served with seasonal vegetables.
The dinnertime Préfixe option (¥4,800) allows you to choose from a grand line-up of entrées, mains and desserts, followed by coffee/tea.
The starter menu includes a wide range of offerings, such as Foie Gras teppanyaki, Paté de campagne, assorted charcuterie cuts and endive, fig, ham and parmesan salad.
Supporting the lobster/scallop and lamb, guests can expect to tuck into Japanese beef in red wine, roast Matsusaka pork, Iwate Okunoto chicken confit and Kumamoto beef with foie gras teppanyaki – all French-based dishes using some of Japan's finest regional meats, and backed by a French-inspired wine menu.
We found Bistro Buzz delivered something unique and memorable – rather than try to solely emulate French cooking and disappoint, Buzz embraces its Japanese roots, taking advantages of the nation's quality flavours and integrating them into an all-new experience.
